Sticky Rice With Mangoes


I had to smile when my friend Leslie requested the sticky rice with mangoes *recipe*. It's probably the Thai equivalent of a recipe for Rice Krispy treats. So dear Leslie, once you throw this all together, you must sprinkle flour over your face and clothing to give the illusion of hours spent in the kitchen.

Sticky Rice with Mangoes

1 1/4 cups sweet rice
1 can coconut milk
1/3-1/2 cup palm sugar (or light brown sugar)
1 tsp salt
2 ripe mangoes

Soak the sweet rice overnight. Sweet rice can be found at almost any Asian grocery store and is sometimes called glutinous rice. It is not technically *sweet*--but is very sticky. When cooked, it can be rolled into balls and hold its shape.


Steam rice in bamboo steamer for 20 minutes. While rice steams, stir together sugar, salt and coconut milk over medium low heat. Remove from heat when sugar is dissoved and just before the mixture boils. When rice is done, mix rice and coconut milk together in bowl. Set aside for 10 minutes.


Peel and slice mangoes. Spread rice in small casserole dish. Layer mangoes on top and serve immediately.

  1. oh Mary, hooray!! You made my day. I am so excited i am going to go out tomorrow and get everything that i need. Hopefully i can do it justice. Can i make the rice in a pot instead of the rice steamer...i don't have one? :o)

  2. Hey sweets. I don't think you can make this kind of rice without steaming. If you are going to an asian grocer, they sell this cone shaped basket for like 3$ and it fits over any of your stockpots. Or you can use cheese cloth in your veggie steamer...

  3. I am going to refer all my work friends to your blog for this! We go to the thai restaurant across the street from work at least once a week, and one day they decided to try the "Sticky Rice with Mangoes." They raved about it so much, that I was forced to make it for them when we went to Sedona. Now they constantly request it..though I've given them all the difficult recipe:) I think they just want me to cook for them...

  6. then i will buy a proper rice steamer just so i can make this. Thanks for the good intentions Dee. And it is true, everything is better when someone else is making it for you.
